Many San Antonio folks have been wondering what’s next for Pearl’s Food Hall at Bottling Dept. since the long-running Tenko Ramen ended service late last year. Well, the wait is finally over, as Potluck Hospitality, the restaurant group responsible for several of Pearl’s most lauded restaurants, announced the arrival of two new concepts to the food hall in a recent news release.

The two new pop-up restaurants are Pasta Factory and barbecue stand Three Six General, both of which are officially open for business. The new pop-ups are in good company, joining Bottling Dept.’s other diverse offerings, including WonderSlice and Mi Roti. They will occupy the spaces where Chilaquil and El Diente De Oro used to be inside the hall.

Pasta Factory is exactly what it sounds like, a straightforward pasta spot serving up Italian-inspired dishes like fettuccine alfredo, poblano penne rigate, pomodoro spaghetti, bolognese pasta spaghetti, and lasagna. Husband-and-wife duo Orlando and Susana Aquirre, who own and operate Chilaquil, are behind the new pasta concept.

“Following our growth from Chilaquil, we’re excited to expand our offerings and share the food that connects our community,” Orlando Aguirre said in a news release.

Three Six General comes from founder Mattison Bills, who founded the barbecue pop-up in San Marcos in 2019. Its Central Texas-style menu includes a fried chicken sandwich, hot pastrami sandwich, wings, fries, and mac and cheese, with a lineup of smoked meats to be added in the coming weeks.
